Major Assessment

For our major project this year (aside from working in the school restaurant) we get to basically invent a restaurant or food establishment or something along those lines. Next week we’ll be given the criteria sheet and on it it will tell us what our kind of establishment it is, how many people it will seat, and what season we’re in and from there we figure out what kind of food we will serve (French, Modern Australian, Italian, etc), our name, our kitchen layout, our 16 menu items complete with food costing and workflow plan of each dish along with the recipe (full recipe cards), staff rostering and so on and so on.

It’s going to be a major challenge but an interesting one.

Food is also limited to the region and the season we are allocated. I’m hoping to get autumn or summer.  Please please please.

It’s a 5-6 stage project so at least that makes it more manageable. Parts 1 and  2 are due end of March. Eeep!
